Have you looked at the new STM Discovery board with built in LCD? $33 is not as cheap as a $9 ebay module but you can do SO SO much more. 3D graphics and realtime graphing / gauges etc. It wouldn't be that hard to make the board an SPI slave also (easiest would be to accept commands over UART) I wou...

Received the boards today (thank you!) and most of the parts from digikey and mouser.
I have the CAN and VR sections soldered up but it's slow going by hand. Is the ebay part you speak of the dc - dc voltage converter?

Unfortunately the dyno is pretty far from Chicago. We can talk about that in private messages :) I'm currently working out of Albuquerque, NM.
