rusefi as a stand alone datalogger?

Hello, I'm new to the forum, and ecu stuff in general.

I have an old mechanical diesel and want to datalog various sensors. Ideally eventually outputting to a custom led dash, but that's later.

I would like to log the following:

- 1 boost sensor: 100psi (later i would like to add a second when I compound turbo)
- exhaust manifold pressure: 150psi
- Fuel pressure: 50psi
- 5 temperature sensors: coolant, oil, intake air, ambient air, and pre intercooler
- 1x egt sensor, k-type
- 1x turbo speed: VR type, up to 200k rpm (likley closer to 150k)
- rpm sensor (believe it's a hall type)
- speed (not as critical, I'll figure out what signal is)
- baro for atmospheric conditions.

Can Rusefi be used as a datalogger, and not to control the engine?

The idea of building a datalogger on a teensy is above my pay grade, so hoping to use something cheap and readily documented.
