when you put the voltmeter on the signal wires from the pedal
with 5V and ground supplied to pedal
and move the pedal up and down
what are the voltages output on the wires?
0.5 to 3.5V on one output?
and
4.5 to 0.5 V on the second output?
that is normal for most bosch units

When I put the multimeter on the wires, I'm getting 2.38 on the primary at full throttle and 4.68 on the secondary at full throttle

Are you comfortable detaching PCB from rear cover and poking DMM into corresponding pin to check voltage on pin?
Did you crimp or was it a pigtail?

I did not crimp anything as i wanted to be sure things were working properly before crimping. Im not completely sure what all is involved in that process

Oh now I see that you use MRE pigtail. Still same question - are you comfortable poking into back side of PCB with rear plate removed?
I am kind of running out of ideas

sounds correct.
and around 0.5V on each when the pedal is at idle?

Detached the PCB from rear cover and poked DMM into corresponding pin. Im getting the same voltage at the pins that I was getting at the wires on the pigtail.

If it still does not work type to unbolt from case and poke into pins on the back of the PCB, just be careful. Time to tipple-check if voltage gets all the way to PCB.

no reason is given for this advise but I wonder if that is related to your issue

Jimmy says Mercedes sensors are pretty unreliable.

none of the many car sensors is actually manufactured by the car companies themselves.
Nearly all parts have a dual supplier (or at least dual factory) strategy in order to avoid supplier lock-in.
In a given car model identical parts are coming from different supplier therefore.
When a part has a failure rate above a given percentage the supplier is reviewed and eventually banned.
Above very broad statement is not really helping to address the root cause.
Root cause is most often something like: sensor from supplier A manufactured in week n of year Y in factory F fails prematurely due to tooling issue.
I was working for a Mercedes supplier some years ago.
